To generate Gerbers simply go to the Output menu and select 'Manufacturing plots' (or press SHIFT+P), and select 'Gerber' on the output tab in the dialog which appears.
As for creating a cross-hatched fill - I cannot see how that is done in the current version. Someone else may be able to answer that.
